Datz Restaurant Group in South Tampa (Datz, Dough and Roux) is a nationally acclaimed upscale casual dining destination.  This one of a kind independant restaurant is located in Palma Ceia on MacDill close to Bay to Bay and serves breakfast, lunch and dinner 7 days a week.  The menu features elevated American comfort food with a bit of edge to it such as oversized burgers, giant piles of red velvet pancakes and the Travel Channel featured mac and cheese stuffed meatloaf.  Local and artisanal items are plentiful. Responsiblities included but not limited to: 

  • Staying on the cutting edge of catered menus to impress the client and guests
  • Ensuring the flawless execution of all banquet functions
  • Tracking of food purchases and labor compared to forecasting events on a daily basis
  • Ensuring the compliance of all health and safety codes and policies
  • Communicating effectively with peers, supervisors and subordinates
  • Requisition of all products for station set-up related to group events
  • The set-up, breakdown and clean work station according to established guidelines (to include recipe card)
  • Observing and performing all culinary standards as related to portion size, recipe and presentation.
  • Supervising and coordinating the preparation of all banquet menu items in an appealing and expedient manner, while adhering to the specified recipe card
  • Informing department head of comments related to quality and service and of needs in the work station
  • Ensuring the product freshness and quality
  • Ensuring proper rotation of goods in work station (FIFO – first in, first out)
  • Observing and testing food being cooked by vision, smelling, temperature control and tasting diligent with the logistic outlines for all catered events
 

Requirements

  • Bachelor’s Degree or equivalent combination of education and experience highly preferred
  • Minimum of 2 years of experience as salaried manager in full service, casual dining
  • Experience with full service alcohol serving facility desirable
  • Record of maintaining high standards in restaurant cleanliness, sanitation, food quality, and guest satisfaction
  • Demonstrated leadership skills, including coaching, directing, and motivating a team
  • Some exposure to P&L and sales building highly desirable
